Ingredients
  1. 1 3/4 cups gluten free flour with xanthan gum
  2. 2 cups castor sugar
  3. 2/3 cups raw cocoa powder
  4. 1/2 tsp baking powder
  5. 1/4 tsp salt
  6. 2/3 cups melted coconut oil
  7. 1 tsp vanilla extract
  8. 2 tbsps. ground flax combined with 1/4 cup water
  9. 1 cup warm water
  10. {ganache}
  11. 60g dark chocolate
  12. 30ml agave nectar
  13. 80-100ml coconut cream
  14. hazelnuts to serve
Instructions
  1. Preheat oven to 160 degrees Celsius
  2. Grease one 22cm round cake pan and one 22cm square cake pan
  3. Sift and mix flour, sugar, baking powder, cocoa and salt together in a large bowl
  4. Add oil, flax mixture, vanilla and water
  5. Stir until completely combined
  6. Spoon half the batter into the round cake pan
  7. Spoon the other half into the square pan
  8. Bake both for 25 - 30 minutes
  9. Remove from oven and allow to cool completely in cake pans
  10. {ganache}
  11. Melt chocolate and agave nectar together in microwave or double boiler
  12. Stir in coconut cream until completely incorporated and smooth
  13. {assembly}
  14. Carefully remove round cake from pan and place on serving plate or cake stand
  15. Remove square cake and cut into 2-3cm squares/rectangles
  16. Spread about three tablespoons of ganache onto round cake
  17. Start stacking the brownie squares onto the cake
  18. Drizzle with ganache between each layer of brownies
  19. Sprinkle hazelnuts generously over brownie cake
  20. Pour any remaining ganache over cake
  21. Serve as is or with ice cream
