For the cake
  1. 1 cup gluten free flour
  2. 1 tsp baking powder
  3. 1-1½ tsp matcha powder
  4. ⅛ tsp baking soda
  5. ⅛ tsp salt
  6. ½ tbsp ground flax mixed with 2 tbsp water
  7. 80ml maple syrup
  8. 50ml coconut oil
  9. 60ml warm water
  10. 5ml lemon juice
For the glaze
  1. 80g dark chocolate
  2. 2 tsp coconut oil
For the cake
  1. Preheat oven to 160 ºC
  2. Grease muffin pans
  3. Sift dry ingredients together in medium bowl
  4. Add flax mixture, maple syrup and coconut oil and mix with a metal spoon until combined
  5. Combine lemon juice and warm water
  6. Add to batter and mix with metal spoon until combined
  7. Pour batter into prepared muffin pans
  8. Bake for 25 minutes and test with inserted skewer for no raw batter
  9. Remove from pans and allow to cool on wire rack for 15 minutes
For the glaze
  1. Heat chocolate and coconut oil in microwave until melted
  2. Pour over cakes and sprinkle with extra matcha if desired
