Sweet, roasted cherry tomatoes, served warm from the oven

A beautiful and fragrant collection of herbs and spices from NOMU, kindly arrived on my doorstep a while ago. These tomatoes just love the aromatic origanum and whole bay leaves. Delicious on crusty bread or tossed with home made pasta.

Ingredients
  1. 300g small / cherry tomatoes
  2. 4 tbsp olive oil
  3. 1 tbsp origanum
  4. 2 whole bay leaves
  5. 1 tsp black pepper
  6. 1 tsp smoked chilli flakes
  7. 1 tsp salt flakes
Instructions
  1. Preheat oven to 180 ºC
  2. Halve the tomatoes, leaving a few whole with leaves, for presentation
  3. Combine all the ingredients in a medium bowl, making sure all the tomatoes and bay leaves are coated in olive oil mixture
  4. Spread out on a baking tray
  5. Bake for 30 minutes
  6. Remove the Bay Leaves
  7. Serve warm with crusty toast
Notes
  1. Add half a clove of crushed garlic for extra earthiness
