Festive times are upon us and it's cherry season!
Much excitement! These muffins are my favourite kind of baked goods. They are super pretty, but require very little effort, because who wants to slave away in a hot kitchen during summer.

Festive Season Cherry Almond Muffin Recipe

Ingredients
- 110g gluten free flour with xanthan gum
- 1 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 100 ml agave nectar
- 60 ml apple sauce
- 50 ml coconut oil
- 10 ml vanilla extract
- 15 ml lemon juice
- 80 ml warm water
- 1/4 cup flaked raw almonds
- 1/4 cup chopped fresh cherries
- 6 - 8 stoned whole cherries for decorating
- 1 tbsp powdered sugar for dusting after baked
Instructions
- Preheat oven to 160 degrees Celsius
- Line a cupcake pan with paper cupcake wrappers
- Sift all dry ingredients together and mix well
- Add agave, apple sauce, vanilla and coconut oil
- Mix very well with metal spoon to combine
- Add lemon juice to warm water and stir mixture into batter until completely incorporated
- Stir in flaked almond and chopped cherries
- Pour batter into prepared cupcake pan
- Insert one whole stoned cherry into centre of batter of each muffin
- Bake for twenty minutes
- Serve warm with a dusting of powdered sugar
Notes
- Recipe yields six to eight muffins. Prepare your cupcake pan for eight, just in case.
