Lemon & Lime Cupcakes

A sweet citrus cupcake recipe that yields six cupcakes for when you don't need to feed plenty friends.

If you are planning a larger party, you can go ahead and exactly double all ingredients to make twelve friends very happy.

  1. 3/4 cup gluten free flour with xanthan gum
  2. 1/2 tbsp. baking powder
  3. 1/8 tsp. baking soda
  4. 1/8 tsp. salt
  5. 1/4 tsp. vanilla powder/extract
  6. 50ml coconut oil
  7. 60ml apple sauce
  8. 100ml agave nectar
  9. 100ml warm water
  10. juice of half a lemon
  11. juice of one lime
  12. zest of one lemon
  13. zest of one lime
  14. 1/2 cup coconut cream
  15. 1/8 cup agave nectar
  16. juice of half a lemon
  17. extra zest to decorate
  1. Line cupcake pan with paper cupcake wrappers
  2. Preheat oven to 160 degrees Celsius
  3. Sift dry ingredients together
  4. Add apple sauce, agave, coconut oil and vanilla
  5. Mix well with metal spoon until complete combined
  6. Add lemon and lime juice to warm water
  7. Add water to batter and mix well until all water has been incorporated and batter becomes lighter in colour
  8. Stir in lemon and lime zest
  9. Pour batter into lined cupcake pan
  10. Bake for 20 minutes
  11. Inserted skewer should be free from batter when removed
  12. Combine coconut cream, agave and lemon juice and mix well
  13. Refrigerate until needed
  14. Allow cupcakes to cool completely
  15. Top with prepared coconut cream and extra lemon and lime zest
