Pineapple Right Side Up Cake

There was a pineapple in the house and I didn't want to lose it's yellowness, as you would when baking it upside down

So I tried it the right side up and it turned out nice. It’s a rather moist cake with an almost steamed cake texture. It would of course look prettier if I managed to slice beautiful pineapple rings, but instead i just hacked it into chunks. Will be practicing my fruit slicing in future.

  1. 1 cup gluten free flour with xanthan gum
  2. 1 ½ tsp baking powder
  3. ⅛ tsp baking soda
  4. ⅛ tsp salt
  5. 150ml agave nectar / maple syrup
  6. 60 ml apple sauce
  7. 50 ml coconut oil
  8. 5 ml vanilla extract / powder
  9. 150 ml warm water
  10. 15 ml lemon juice
  1. Preheat oven to 160 degrees Celsius
  2. Grease a 20 - 22cm cake pan
  3. Sift all dry ingredients together and mix well to combine
  4. Add agave, coconut oil, apple sauce and vanilla
  5. Mix well with a metal spoon until completely combined
  6. Add lemon juice to warm water and stir mixture into batter
  7. Continue stirring until completely combined
  8. Pour batter into prepared cake pan
  9. Peel and core pineapple
  10. Slice into rings or chunks or whatever your pineapple slicing skill level
  11. Place pineapple pieces on top of batter in cake pan
  12. Bake for 35 minutes
  13. Cake is ready when inserted skewer comes out clean
  14. Serve warm with a dusting of icing sugar or ice cream
