Simple Chickpea Salad

I love using chickpeas in salads and this one is really simple to make for Spring.

Also try adding some peppers or chopped leafy greens like spinach.

  1. 2 cans chickpeas {drained and rinsed}
  2. 1/2 cucumber {sliced & cubed}
  3. roughly 200g assorted fresh tomatoes {sliced or cubed}
  4. handful fresh coriander
  5. juice of half a lime
  6. tbsp. toasted sesame seeds
  7. 30ml - 45ml olive oil
  1. Combine all ingredients in a medium bowl just before serving
  2. Season with salt and pepper
  3. Serve with sliced avocado and extra limes
  1. Serves 6 - 8 as a side dish
