A most comforting little loaf cake with warm apples and sweet vanilla that just wants to be your friend.

  1. 1 1/2 cup gluten free flour with xanthan gum
  2. 1 tbsp. + 1 tsp. baking powder
  3. 1/4 tsp. baking soda
  4. 1/8 tsp. salt
  5. 1/2 cup apple sauce
  6. 1/2 cup maple syrup
  7. 1/4 cup coconut oil {melted}
  8. 2 tsp. vanilla powder OR 1 1/2 tbsp. vanilla extract OR seeds from one vanilla pod
  9. 1/2 cup warm water
  10. 1 tsp. apple cider vinegar
  11. 2 golden delicious apples {peeled, cored and quartered}
  1. Preheat oven to 160 degrees Celsius
  2. Grease an 18 - 20 cm loaf pan
  3. Sift together all dry ingredients
  4. Add apple sauce, maple syrup, coconut oil and vanilla
  5. Stir with metal spoon until completely combined
  6. Add apple cider vinegar to warm water
  7. Stir water mixture into batter and continue stirring until completely incorporated
  8. Pour batter into greased pan
  9. Slice apple quarters into thin slices and position them on top of the unbaked loaf by inserting them firmly into batter ensuring that they stay upright
  10. Bake for 50 minutes or until inserted skewer is free of batter when removed
  11. Allow to cool slightly and remove from cake pan
  12. Dust with icing sugar and serve while still slightly warm
