Vanilla and Apple Loaf Cake Recipe

Ingredients
- 1 1/2 cup gluten free flour with xanthan gum
- 1 tbsp. + 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. salt
- 1/2 cup apple sauce
- 1/2 cup maple syrup
- 1/4 cup coconut oil {melted}
- 2 tsp. vanilla powder OR 1 1/2 tbsp. vanilla extract OR seeds from one vanilla pod
- 1/2 cup warm water
- 1 tsp. apple cider vinegar
- 2 golden delicious apples {peeled, cored and quartered}
Instructions
- Preheat oven to 160 degrees Celsius
- Grease an 18 - 20 cm loaf pan
- Sift together all dry ingredients
- Add apple sauce, maple syrup, coconut oil and vanilla
- Stir with metal spoon until completely combined
- Add apple cider vinegar to warm water
- Stir water mixture into batter and continue stirring until completely incorporated
- Pour batter into greased pan
- Slice apple quarters into thin slices and position them on top of the unbaked loaf by inserting them firmly into batter ensuring that they stay upright
- Bake for 50 minutes or until inserted skewer is free of batter when removed
- Allow to cool slightly and remove from cake pan
- Dust with icing sugar and serve while still slightly warm
